Heat water or broth in a skillet over medium heat.
Add onion, garlic,and green bell pepper.
Cook and stir over medium heat for 5 minutes.
Add water during this process if necessary.
Add black beans, corn, cumin, and coriander.
Cook for 5 minutes or until beans and corn are warmed through.
Variation â– Let beans and corn cool to room temperature and toss with a dressing of 2 tablespoons apple cider vinegar, 1 tablespoon sugar, and 1 tablespoon water.
