Cannellini Beans With Potatoes And Vegetables

Ingredients
  Cubed potatoes 1 Cup (16 tbs)
  Water/Nonfat chicken broth / vegetable broth 2 Tablespoon
  Frozen green peas 1⁄2 Cup (8 tbs)
  Chopped celery 1⁄4 Cup (4 tbs)
  Chopped yellow pepper/Red bell pepper 1⁄4 Cup (4 tbs)
  Minced onion 1⁄2 Cup (8 tbs)
  Garlic 1 Clove (5 gm), minced
  Cannellini beans 1 1⁄2 Cup (24 tbs) (Home Cooked Or Canned, Drained And Rinsed)
  Lemon juice 1⁄3 Cup (5.33 tbs)
  Balsamic vinegar 1 Tablespoon
  Dried thyme leaves 1 Teaspoon
Directions

1. Place the potatoes and water or broth in a microwave-safe bowl, cover, and microwave on high for 4 minutes or until the potatoes are just tender.
2. Add the peas to the potatoes, cover, and microwave on high for 2 minutes more.
3. Drain peas and potatoes.
4. Toss peas and potatoes with celery, yellow or red pepper, onion, garlic, cannellini beans, lemon juice, balsamic vinegar, and thyme.
