Cannellini Beans With Potatoes And Vegetables
|Cubed potatoes||1 Cup (16 tbs)|
|Water/Nonfat chicken broth / vegetable broth||2 Tablespoon|
|Frozen green peas||1⁄2 Cup (8 tbs)|
|Chopped celery||1⁄4 Cup (4 tbs)|
|Chopped yellow pepper/Red bell pepper||1⁄4 Cup (4 tbs)|
|Minced onion||1⁄2 Cup (8 tbs)|
|Garlic||1 Clove (5 gm), minced|
|Cannellini beans||1 1⁄2 Cup (24 tbs) (Home Cooked Or Canned, Drained And Rinsed)|
|Lemon juice||1⁄3 Cup (5.33 tbs)|
|Balsamic vinegar||1 Tablespoon|
|Dried thyme leaves||1 Teaspoon|
1. Place the potatoes and water or broth in a microwave-safe bowl, cover, and microwave on high for 4 minutes or until the potatoes are just tender.
2. Add the peas to the potatoes, cover, and microwave on high for 2 minutes more.
3. Drain peas and potatoes.
4. Toss peas and potatoes with celery, yellow or red pepper, onion, garlic, cannellini beans, lemon juice, balsamic vinegar, and thyme.
