1⁄2 Cup (8 tbs) (Chopped Fresh Or Low Sodium Canned)
Chopped fresh parsley
1 Cup (16 tbs) (Fresh Or Frozen)
3⁄4 Cup (12 tbs) (Fresh, Frozen, Or Canned)
Heat 1/4 cup of the broth or water in a large saucepan over medium heat.
Add onion and garlic.
Cook and stir over medium heat for 5 minutes.
Add liquid during this process if necessary.
Add parsley and tomatoes.
Simmer for 2 minutes.
Add lima beans and the remaining cup of broth.
Bring to a boil, cover, and simmer for 10 minutes.
Add the corn and the black pepper.
Simmer for 5 minutes more.
