Lima Beans With Corn And Tomatoes
|Non fat chicken broth/Vegetable broth / water||1 1⁄4 Cup (20 tbs)|
|Onion||1 Small, chopped|
|Garlic||1⁄2 Clove (2.5 gm), minced|
|Tomatoes with juice||1⁄2 Cup (8 tbs) (Chopped Fresh Or Low Sodium Canned)|
|Chopped fresh parsley||1 Tablespoon|
|Lima beans||1 Cup (16 tbs) (Fresh Or Frozen)|
|Corn kernels||3⁄4 Cup (12 tbs) (Fresh, Frozen, Or Canned)|
|Black pepper||1⁄4 Teaspoon|
Heat 1/4 cup of the broth or water in a large saucepan over medium heat.
Add onion and garlic.
Cook and stir over medium heat for 5 minutes.
Add liquid during this process if necessary.
Add parsley and tomatoes.
Simmer for 2 minutes.
Add lima beans and the remaining cup of broth.
Bring to a boil, cover, and simmer for 10 minutes.
Add the corn and the black pepper.
Simmer for 5 minutes more.
