Lemon-Mint Green Beans
|Trimmed green beans||1 Pound|
|Garlic||1 Clove (5 gm), minced|
|Lemon juice||1 Tablespoon|
|Black pepper||1⁄4 Teaspoon|
|Dry mustard||1⁄2 Teaspoon|
|Plain non-fat yogurt||1⁄3 Cup (5.33 tbs)|
|Dried mint leaves||1⁄2 Teaspoon|
Bring 1 inch of water to a boil in a steamer.
Place beans in a steamer basket or colander.
Cover and steam for 12 minutes or until tender.
Combine green beans, lemon juice, dry mustard, dried mint leaves, garlic, black pepper, and yogurt.
Toss beans with lemon-mint sauce.
