Salt Pork Baked Beans
|Beans||3 Cup (48 tbs), dried|
|Salt pork||1⁄4 Pound|
Pick over the beans and wash them thoroughly.
Soak them overnight in cold water.
Add enough cold water to cover and cook slowly for 45 minutes.
Pour the beans into a baking dish.
Cut the pork into 1/2-inch strips; bury in the beans.
Mix the molasses, sugar, mustard, and salt with enough boiling water to dissolve.
Pour the mixture over the beans, adding enough boiling water to cover.
Cover the pan and bake in a moderate oven (325Â° F ) from 4 to 6 hours.
