White Bean Omelette
|Dried white beans||3⁄4 Cup (12 tbs)|
|Olive oil||1⁄4 Cup (4 tbs)|
|Salt||1 Pinch, large|
Heat olive oil in skillet; fry beans lightly and remove.
Allow them to cool a few minutes before adding to bowl containing eggs beaten with salt.
