Shell the beans.
Spread the sliced onion in the bottom of a saucepan, and on top of the onion, the tomatoes, skinned and cut into small pieces.
Add a bunch of mixed herbs, one or two cloves of garlic, and the shelled beans: also a pinch of grated nutmeg, salt, and pepper.
Cover and cook over a very gentle heat for 1 1/2 to 2 hours.
