Chili Bean and Mushroom Casserole

Ingredients
  Olive oil 1 Tablespoon
  Onion 1 , peeled and finely chopped
  Garlic 1 Clove (5 gm), crushed
  Red pepper 1 , deseeded and diced
  Mushrooms 8 Ounce, wiped and halved (225 Gram)
  Chili powder 1⁄2 Teaspoon
  Ground cumin 1⁄2 Teaspoon
  Dried thyme 1 Teaspoon
  Tomatoes 14 Ounce, pureed (1 Tin, 400 Gram)
  Red kidney beans 14 Ounce (1 Tin, 400 Gram)
  Tomato puree 1 Tablespoon
  Shoyu 1 Tablespoon
  Vegetable stock 5 Fluid Ounce (150 Milliliter)
  Sour cream 5 Fluid Ounce (To Serve)
Directions

MAKING
1. Take a skillet, heat some oil and fry the onion for about 3 minutes. Stir in vegetables, garlic, and spices and cook for about 2 minutes.
2. Stir in remaining ingredients and pressure cook for 15 minutes.
3. Depressurize the mixture and add seasonings as per the taste preferences.

SERVING
4. Serve the Chili Bean and Mushroom Casserole with an accompaniment of soured cream in separate bowl.
