Steamed Spareribs With Black Beans

Ingredients
  Pork spareribs 1 1⁄2 Pound (700 Grams)
  Salt 1 Teaspoon
  Chicken stock 4 Fluid Ounce (110 Milliliter)
  Light soy sauce 1 Tablespoon
  Sesame oil 1 Teaspoon
  Fresh ginger 1 Teaspoon, finely chopped
  Black beans 1 1⁄2 Tablespoon, coarsely chopped
  Garlic 2 Teaspoon, finely chopped
  Salt 1⁄2 Teaspoon
  Sugar 1 Teaspoon
  Dry sherry/Rice wine 1 Tablespoon
Directions

GETTING READY
1 Ask your butcher to cut the spareribs into individual ribs, then into 2 inch (5 cm) segments.
2 Rub the spareribs with salt and keep aside in a bowl for about 20-25 minutes.

MAKING
3 In a large saucepan, add water and bring it to a boil.
4 Lower the heat, and add the spareribs.
5 Simmer for about 10 minutes.
6 Drain well and discard the water.
7 In a large bowl, mix the other ingredients and stir in the spareribs.
8 Coat them evenly with the mixture.
9 Transfer the mixture to a deep plate or dish.
10 Set up a steamer or put a rack into a wok or a large, deep pot.
11 Pour in 2inches (5cm) water.
12 Bring the water to a boil.
13 Lower the heat.
14 Carefully lower the plate of spareribs into the steamer or onto the rack.
15 Cover it with a lid and steam gently for 1 hour or until the spareribs are very tender.
16 Replenish the hot water when necessary.
17 Skim off any surface fat.

SERVING
18 Serve at once.

TIP
You can make this dish ahead of time and re-heat the ribs by steaming for 20 minutes or until they are hot.
