Vegetarian Rice And Black Bean Chili

Ingredients
  Water 2 1⁄2 Cup (40 tbs)
  Black beans and rice 2 Cup (32 tbs) (UNCLE BEN'S Brand)
  Thinly sliced carrot 1⁄2 Cup (8 tbs)
  Zucchini 1 Small, quartered lengthwise and sliced
  Diced red bell pepper 1⁄3 Cup (5.33 tbs)
  Tomato sauce 8 Ounce (1 can)
  Cheddar cheese 2 Ounce (1/2 cup)
Directions

MAKING
1 In a medium saucepan, place water.
2 Stir in beans & rice and contents of seasoning packet.
3 Gradually bring to a boil.
4 Add in the carrot.
5 Cover and lower the heat.
6 Simmer for 10 minutes.
7 Add in the zucchini and bell pepper.
8 Cover and lower the heat.
9 Simmer for 5 minutes.
10 Stir in the tomato sauce.
11 Cover and simmer for 8 to 10 minutes or until the rice is tender.

SERVING
12 Top with cheese and serve at once.
