Barbecued Bear Roast
|Salt and pepper||1|
|Garlic||1 Clove (5 gm), crushed|
|Brown sugar||2 Tablespoon|
|Dry mustard||1 Teaspoon|
|Chili powder||1⁄4 Teaspoon|
|Cayenne pepper||1⁄8 Teaspoon|
|Worcestershire sauce||2 Tablespoon|
|Vinegar||1⁄4 Cup (4 tbs)|
|Tomato juice||1 Cup (16 tbs)|
|Catsup||1⁄4 Cup (4 tbs)|
Place roast in small roaster.
Season to taste with salt and pepper; rub with garlic.
Bake at 350 degrees for 1 hour or until well done.
Cut into thin slices.
Com- bine 1 teaspoon salt, brown sugar, seasonings, vine- gar, tomato juice, catsup and 1/2 cup water in heavy skillet.
Simmer for 15 minutes.
Add meat; simmer for 1 hour or until roast is tender.
