Steamed Pork Spare Ribs With Black Bean Sauce
Spring onions - 2, cut into short sections, to garnish
For the marinade:
Garlic - 1 teaspoon, finely chopped
Fresh ginger root - 1/2 teaspoon, finely chopped
Fresh red or green chillies - 1 teaspoon, finely chopped
Black bean sauce - 2 tablespoons
Light soy sauce - 1 tablespoon
Chinese rice wine - 1 tablespoon
Cornflour - 2 teaspoons
1. To prepare the spare-ribs chop them into small bite-size pieces, marinate in the marinade for at least 1 hour - the longer the better.
2. On a heat-proof platter, spread the ribs out and steam in a hot steamer over a high heat for 25-30 minutes.
3. Remove the platter and serve hot with the garnish.
