Lyonaise Beans

Ingredients
  Dried lima beans 1 1⁄2 Cup (24 tbs)
  Onions 2 Medium
  Butter 1⁄4 Cup (4 tbs)
  Chopped parsley 1 Tablespoon
Directions

GETTING READY
1) Place beans in water to soak overnight.
2) Drain the beans next day.
3) Peel the onions and finely chop them.

MAKING
4) In a saucepan, place the beans add 1 quart fresh water.
5) Cover the pan and cook beans for about 1 hour till tender.
6) At the end of cooking time, add little salt..
7) In a saucepan, melt the butter and add the onions, parsley and seasoning.
8) Cook on low fire till onions are transparent.
9) Drain beans well, then toss them in the onion and parsley mixture.

SERVING
10) In a warmed serving dish, transfer the beans and serve.
