Marinated Green Bean And Onion Salad
|Cold water||1⁄2 Cup (8 tbs)|
|Green beans||1 3⁄4 Pound|
|White sugar||2 Teaspoon|
|Freshly ground pepper||1⁄4 Teaspoon|
|Hard-boiled eggs||2 , sliced (For Garnish)|
|Stalk celery||1 , chopped finely (For Garnish)|
|Finely chopped chives||2 Tablespoon (For Garnish)|
Peel and slice onions thinly.
Cover with cold water.
Set aside for 2 hours.
Drain onions, press water out with paper towels.
Steam beans 15-20 minutes or boil beans 12-15 minutes until tender but still slightly crisp.
Combine oil, vinegar, sugar, salt, and pepper.
Pour over the beans while still warm.
Toss, let cool.
Add the onions and toss again.
To serve, place in a large bowl, slice the eggs over the centre of the beans, arrange the celery around the edges, and sprinkle with the chives.
