Angel Hair Pasta With Lemon And White Beans
|Lemon zest||1 , finely grated|
|Lemon juice||2 Tablespoon|
|Olive oil||2 Teaspoon|
|Freshly ground black pepper||1⁄4 Teaspoon|
|Low sodium chicken broth||1⁄2 Cup (8 tbs)|
|Drained cooked white beans||8 Ounce|
|Chopped basil||1⁄2 Cup (8 tbs)|
|Chopped fresh parsley||1⁄4 Cup (4 tbs)|
|Angel hair pasta||4 1⁄2 Ounce, cooked, drained|
|Grated asiago cheese||2 Tablespoon|
1. In medium serving bowl, combine lemon zest, lemon juice, margarine, oil and pepper; set aside.
2. In large nonstick skillet, heat broth; add beans, basil and parsley. Cook, stirring frequently, 2-3 minutes, until heated through.
3. Add pasta and bean mixture to serving bowl; toss to mix well. Sprinkle with cheese.
