Yam and Lima Bean Platter
|Yams||1 Pound (3 pieces)|
|Frozen lima beans||1 1⁄2 Cup (24 tbs), frozen|
|Dried basil||1 Pinch|
|Lemon juice||1 Teaspoon|
|Ground ginger||1 Pinch|
Feel yams and slice 1/4 inch (5 mm) tlhick.
Overlap slices in single row around edge of microwave-safe din-ner plate.
Place lima beans in centre and sprinkle with basil.
Cover with plastic wrap, turning back 1 corner to vent.
Micro-cook at high for 3 minutes.
Stir beans; re-cover and micro-cook at high for 3 to 5 minutes or until yams are tender and beans are hot and cooked.
In 1-cup (250 mL) measuring cup, micro-cook butter at high until melted.
Stir in lemon juice and salt; drizzle over vegetables.
Sprinkle yams with ginger.
Let stand, tightly covered, for 5 minutes.
