Black Beans and Rice with Cumin Vinaigrette
|Canned black turtle beans||6 Ounce, drained|
|Cooked long grain rice||1 Cup (16 tbs), chilled|
|Red bell pepper||1⁄2 Cup (8 tbs), diced|
|Rice vinegar||1⁄2 Tablespoon|
|Fresh cilantro/Fresh parsley||2 Teaspoon, chopped (Chinese Parsley)|
|Olive oil||2 Teaspoon|
|Ground cumin||1⁄4 Teaspoon|
1.Take a medium bowl and add in beans, bell pepper, rice and mix well.
2.In a mixing bowl, beat together the remaining ingredients with a fork or a whisk.
3.Pour this on the rice mixture and toss well to coat.
4. Can be served immediately.
5. Alternatley, refrigerate and serve chilled.
