Scallion And Beans

Ingredients
  Dried white beans 1 Pound, washed
  Scallions 4 , chopped (Including Tops)
  Garlic 2 Clove (10 gm), peeled, pressed
  Lemon juice 1⁄4 Cup (4 tbs)
  Olive oil 1⁄2 Cup (8 tbs)
  Chopped parsley 1 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

Soak beans overnight, drain, and simmer in water to cover until done, about 2 hours.
Drain and cool.
Make dressing of scallions, garlic, lemon juice, olive oil, and salt and pepper.
Pour over beans; top with parsley.
Chill for several hours.
