Dried Lima Beans
|Dried lima beans||1 Pound|
|Bacon dripping||2 Tablespoon|
|Flour||1⁄4 Cup (4 tbs)|
1. In a large kettle, add the beans, hambone, onion and salt, add cold water to cover; bring to a boil. Reduce heat; cover kettle. Simmer until beans are tender, adding boiling water as needed.
2. Heat bacon drippings in skillet. Blend in flour; cook, stirring con- stantly, until flour is browned.
3. Remove hambone from kettle. Stir browned flour into beans; bring to a boil, stirring until bean liquid is thickened.
4. Serve hot
