Pinto Bean Pie
|Cooked pinto beans||2 Cup (32 tbs)|
|Sugar||2 Cup (32 tbs)|
|Margarine||1⁄2 Cup (8 tbs), melted|
|Unbaked pastry shell||2 (8 inch)|
1. Preheat the oven
2. Place beans in large mixing bowl; mash until smooth.
3. Stir in sugar, flour and margarine; beat in eggs, one at a time. Add vanilla and nutmeg; mix well.
4. Spoon bean mixture into pastry shells. Bake at 350 degrees for 35 minutes or until browned
5. Serve warm topped with whipped cream or dessert topping.
