  Chinese beans 1 Cup (16 tbs)
  Water 2 Cup (32 tbs)

Small Chinese beans, obtainable at any store that sells oriental and continental foods.
Take a cake cooler and make a butter muslin cover in double thickness twice the size of the" cooler.
Wet the muslin well, then place half over the cooler.
Lay the beans close together, cover with the other half of the muslin, and place the cooler over a dish for water to drip on to.
Place in cool position such as pantry in good light.
Remember to pour fresh water over every day.
The sprouts may be used when they are about 1 inch long.
Serve raw in salads — the best way — or cook for 5 to 10 minutes only so that they are still crisp.
Add to curries or soups and rice.
