|Whole green beans||1 1⁄2 Pound|
|Butter/Margarine||1 1⁄2 Tablespoon|
|Evaporated milk||3⁄4 Cup (12 tbs)|
|Hard-cooked eggs||3 , separated|
|Mayonnaise||3⁄4 Cup (12 tbs)|
Cook beans in boiling, salted water until tender.
Save 1/2 cup of the liquid.
Blend in flour, salt, and pepper.
Add bean stock and cook until thickened, stirring constantly.
Add milk and chopped egg whites.
Remove from heat and add mayonnaise.
Cover with sauce and sprinkle with sieved egg yolks.
