Rancho Lima Beans

Ingredients
  Fresh lima beans 2 Cup (32 tbs)
  Ground beef 1⁄2 Pound
  Onions 2 Medium, sliced
  Garlic 1 Clove (5 gm), pressed
  Whole tomatoes 28 Ounce (Drained)
  Crushed red pepper 1 Teaspoon
  Salt 1 Teaspoon
  Chili powder 1 Teaspoon
  Shredded cheddar cheese 2 Ounce (1/2 Cup)
Directions

GETTING READY
1)Cook lima beans until tender for about 20 to 30 minutes in boiling water.
2)Drain the cooked beans but remember to keep aside 1 cup of drained liquid.

MAKING
4)In a small Dutch oven cook minced beef, garlic and onion until the beef turns brown in color.
5)To the beef, add lima beans, tomatoes, red peppers, reserve liquid, chili powder and salt.
6)Simmer covered for 50 minutes.
7)Stir in the cheddar cheese.
8)Cover and continue to cook for another 10 minutes.

SERVING
9)Serve as main course dish with crisp bacon or sausages.
