Lima Bean Ham Chowder
|Large dried lima beans||1 1⁄2 Cup (24 tbs)|
|Meaty ham hocks||1 Pound|
|Chopped onion||1 Cup (16 tbs)|
|Chopped green pepper||1⁄2 Cup (8 tbs)|
|Milk||2 Cup (32 tbs)|
|Canned cream style corn||8 3⁄4 Ounce (1 Can)|
Cover beans with 4 cups water.
Bring to boiling; simmer 2 minutes.
Remove from heat; let stand 1 hour.
Add ham hocks; cover and simmer till tender, about 1 1/2 hours.
Add 1 teaspoon salt during last 30 minutes of cooking.
Remove ham hocks.
Mash beans slightly.
Remove ham from bones; shred and set aside.
Cook onion and green pepper in margarine till tender.
Add to limas along with ham, milk, and corn.
Heat, but do not boil.
Season to taste.
