Family Style Hot Dogs With Red Beans And Rice
|Vegetable oil||1 Tablespoon|
|Onion||1 Medium, chopped|
|Green bell pepper||1⁄2 Medium, chopped|
|Garlic||2 Clove (10 gm), minced|
|Red kidney beans||14 Ounce, drained, rinsed (1 Can)|
|Great northern beans||14 Ounce, drained, rinsed (1 Can)|
|Beef hot dogs||1⁄2 Pound, cut into 1/4 inch thick slices|
|Uncooked instant rice||1 Cup (16 tbs)|
|Vegetable broth||1 Cup (16 tbs)|
|Ketchup||1⁄4 Cup (4 tbs)|
|Packed brown sugar||1⁄4 Cup (4 tbs)|
|Dark molasses||3 Tablespoon|
|Dijon mustard||1 Tablespoon|
PREHEAT oven to 350°F.
Spray 13x9-inch baking dish with nonstick cooking spray.
HEAT oil in Dutch oven over medium-high heat until hot.
Add onion, pepper and garlic; cook and stir 2 minutes or until onion is tender.
ADD beans, hot dogs, rice, broth, ketchup, sugar, molasses and mustard to vegetables; stir to combine.
Pour into prepared dish.
COVER tightly with foil and bake 30 minutes or until rice is tender.
Garnish with zucchini, if desired.
