Green Bean Salad
|Green beans||1 Pound, end trimmed and cut into 2-inch lengths|
|Broad beans in their pod||1⁄2 Pound, ends trimmed and cut into 2-inch lengths|
|Scallions||3 , thinly sliced|
|Olive oil/Sunflower oil||2 Tablespoon|
|Wine vinegar||1 Tablespoon|
|Dry mustard||1⁄2 Teaspoon|
Put all the beans into a saucepan.
Pour on boiling water to a depth of about 1 inch.
Cover the pan with a lid and bring the water back to boiling point.
Simmer for 2 minutes, then drain.
Mix all the dressing ingredients together.
Taste and adjust the seasoning, if necessary.
Add the dressing to the beans and toss together.
Put the dressed beans into a large serving bowl.
Cover and set aside to cool until ready to serve.
