Kidney Beans and Tripe
|Tripe||1⁄4 Pound, rinsed, parboiled for 30 minutes, drained and the cooking liquid reserved|
|Dried kidney beans||1 Cup (16 tbs), soaked in water overnight and drained|
|Onion||1 Large, chopped|
|Black pepper||1⁄4 Teaspoon|
|Ground cinnamon||1⁄4 Teaspoon|
|Rendered bacon fat/Ham fat||1 Tablespoon|
|Water||2 Cup (32 tbs)|
Combine all the ingredients in a pot with 1 cup [1/4 liter] of the tripe cooking liquid.
Bring to a boil over high heat and boil for 10 minutes.
Reduce the heat and cover the pot.
Simmer for one hour, or until the beans are tender.
Add more tripe cooking liquid as needed to keep the tripe and beans covered throughout the cooking time.
Correct the seasoning.
