Mixed Bean Chilli
|Extra virgin olive oil/Vegetable /rapeseed oil||1 Tablespoon|
|Onion||1 , finely chopped|
|Garlic||2 Clove (10 gm), crushed|
|Green pepper||1 , deseeded and finely chopped|
|Red pepper||1 , deseeded and finely chopped|
|Ginger cube||1 Inch, grated (Use Fresh)|
|Tomato paste||3 Tablespoon|
|Canned chopped tomatoes||400 Gram|
|Canned kidney beans||400 Gram, drained|
|Canned butter beans||400 Gram, drained|
|Canned chickpeas||400 Gram, drained|
|Fresh parsley/Fresh coriander||1 Tablespoon (For Serving)|
In a large pan, heat the oil and add the onion.
Cook for a few minutes, then add the garlic.
Add the peppers and cook for a few more minutes, adding a little more oil if needed.
Add the ginger, tomato paste and tomatoes.
Mix in well for 1 minute before adding all the beans and chickpeas.
Simmer for a few minutes so everything is warm.
Serve sprinkled with parsley or coriander.
