Mixed Bean Chilli

Ingredients
  Extra virgin olive oil/Vegetable /rapeseed oil 1 Tablespoon
  Onion 1 , finely chopped
  Garlic 2 Clove (10 gm), crushed
  Green pepper 1 , deseeded and finely chopped
  Red pepper 1 , deseeded and finely chopped
  Ginger cube 1 Inch, grated (Use Fresh)
  Tomato paste 3 Tablespoon
  Canned chopped tomatoes 400 Gram
  Canned kidney beans 400 Gram, drained
  Canned butter beans 400 Gram, drained
  Canned chickpeas 400 Gram, drained
  Fresh parsley/Fresh coriander 1 Tablespoon (For Serving)
Directions

In a large pan, heat the oil and add the onion.
Cook for a few minutes, then add the garlic.
Add the peppers and cook for a few more minutes, adding a little more oil if needed.
Add the ginger, tomato paste and tomatoes.
Mix in well for 1 minute before adding all the beans and chickpeas.
Simmer for a few minutes so everything is warm.
Serve sprinkled with parsley or coriander.
