Scallops & Green Beans
|Frozen french style green beans||9 Ounce (1 Package)|
|Cornflake crumbs||1⁄2 Cup (8 tbs)|
|Grated parmesan cheese||1⁄4 Cup (4 tbs)|
|Parsley flakes||1 Teaspoon|
|Garlic powder||1 Dash|
|Egg||1 , slightly beaten|
|Scallops||1 Pound (Fresh / Defrosted)|
|Canned sliced water chestnuts||8 Ounce, drained (1 Can)|
Microwave green beans in package at High 2 to 3 minutes, or until defrosted.
On wax paper combine crumbs, cheese, parsley and seasonings.
Set aside, reserving 1 tablespoon for vegetables.
Melt butter in small dish at High 30 to 45 seconds.
Blend with egg.
Dip scallops in egg mixture.
Coat well with crumbs.
Arrange scallops around outside of roasting rack.
Combine beans and water chestnuts.
Mound in center of scallops.
Sprinkle with reserved crumbs and paprika.
Microwave 5 to 8 1/2 minutes, or until scallops are opaque, rotating dish after half the time.
