Soy Bean Casserole

Ingredients
  Chopped celery 2 Cup (32 tbs)
  Chopped onion 2 Ounce
  Green pepper 1⁄4 Medium, seeded and chopped
  Instant chicken broth and seasoning mix 1⁄2 Ounce, dissolved in 1/4 cup hot water (1/2 Packet)
  Flour 8 Teaspoon (2 Tablespoons Plus 2 Teaspoons)
  Skim milk 2 Cup (32 tbs)
  Cooked dried soybeans 1 1⁄2 Pound
  Salt 1 Teaspoon
  Enriched white bread slices 2 , made into crumbs
  Margarine 4 Teaspoon (1 Tablespoon Plus 1 Teaspoon)
Directions

In saucepan cook celery, onion, and green pepper about 3 minutes.
Add dissolved broth mix; cook 5 minutes.
Blend in flour.
Slowly add milk and cook, stirring constantly until mixture thickens.
Add beans and salt.
Mix well.
Pour into a 1-quart nonstick baking dish.
Sprinkle evenly with bread crumbs.
Dot evenly with margarine.
Bake at 350°F.
for 30 minutes or until golden brown.
Divide evenly.
