Soy Bean Casserole
|Chopped celery||2 Cup (32 tbs)|
|Chopped onion||2 Ounce|
|Green pepper||1⁄4 Medium, seeded and chopped|
|Instant chicken broth and seasoning mix||1⁄2 Ounce, dissolved in 1/4 cup hot water (1/2 Packet)|
|Flour||8 Teaspoon (2 Tablespoons Plus 2 Teaspoons)|
|Skim milk||2 Cup (32 tbs)|
|Cooked dried soybeans||1 1⁄2 Pound|
|Enriched white bread slices||2 , made into crumbs|
|Margarine||4 Teaspoon (1 Tablespoon Plus 1 Teaspoon)|
In saucepan cook celery, onion, and green pepper about 3 minutes.
Add dissolved broth mix; cook 5 minutes.
Blend in flour.
Slowly add milk and cook, stirring constantly until mixture thickens.
Add beans and salt.
Pour into a 1-quart nonstick baking dish.
Sprinkle evenly with bread crumbs.
Dot evenly with margarine.
Bake at 350°F.
for 30 minutes or until golden brown.
