Starting with the Recipe for Black Bean Brownies, I have altered the Recipe to make these delicious Slow-low Carb Muffins that are completly Flour and Glutin Free. A Yummy Way to Start the day for anyone looking to lower thier Carb intake.
  Canned white beans 15 1⁄2 Ounce, rinsed (Drained , Chick Peas could most likely be used instead)
  Eggs 2
  Splenda 1 Cup (16 tbs)
  Baking powder 1 Teaspoon
  Baking soda 1⁄2 Teaspoon
  Cinnamon 2 Teaspoon
  Nutmeg 1 Teaspoon
  Fat free milk 2⁄3 Cup (10.67 tbs)
  Vanilla 1 Tablespoon
  Light margarine 3 Tablespoon
  Fat free ricotta 1⁄4 Cup (4 tbs)
  Walnuts 1⁄2 Cup (8 tbs)

Preheat Oven too 350
In a Blender, Blend the Beans and eggs.
Combine with all the other Ingredients in a mixing Bowl, don't over mix though
Pour in to Muffin Tins (I use large Muffin Tins, and this recipe made 5 muffins)
Bake for 40 minutes at 350

While looking for Dessert Items that were South Beach Diet Friendly, I came upon the recipe for Black Bean Brownies. Unbeleaving that such a thing was possable, I just had to try it. Sure Enough, they were delicious, and the texture was the same as a normal brownie, it was great. My Mind quickly started to come up with other Baking with Beans ideas. and this was the First Recipe I came up with. They are Light, Fluffy and full of Flavor... Enjoy
