Pumpkin Spice Walnut White Bean Muffins

Starting with the Recipe for Black Bean Brownies, I have altered the Recipe to make these delicious Slow-low Carb Muffins that are completly Flour and Glutin Free. A Yummy Way to Start the day for anyone looking to lower thier Carb intake.
Ingredients
  Canned white beans 15 1⁄2 Ounce, rinsed (Drained , Chick Peas could most likely be used instead)
  Eggs 2
  Splenda 1 Cup (16 tbs)
  Baking powder 1 Teaspoon
  Baking soda 1⁄2 Teaspoon
  Cinnamon 2 Teaspoon
  Nutmeg 1 Teaspoon
  Fat free milk 2⁄3 Cup (10.67 tbs)
  Vanilla 1 Tablespoon
  Light margarine 3 Tablespoon
  Fat free ricotta 1⁄4 Cup (4 tbs)
  Walnuts 1⁄2 Cup (8 tbs)
Directions

Preheat Oven too 350
In a Blender, Blend the Beans and eggs.
Combine with all the other Ingredients in a mixing Bowl, don't over mix though
Pour in to Muffin Tins (I use large Muffin Tins, and this recipe made 5 muffins)
Bake for 40 minutes at 350

While looking for Dessert Items that were South Beach Diet Friendly, I came upon the recipe for Black Bean Brownies. Unbeleaving that such a thing was possable, I just had to try it. Sure Enough, they were delicious, and the texture was the same as a normal brownie, it was great. My Mind quickly started to come up with other Baking with Beans ideas. and this was the First Recipe I came up with. They are Light, Fluffy and full of Flavor... Enjoy

Where is the pumpkin in this recipe? Seems to be missing. How much should be added to make this as PUMPKIN Spice Walnut White Bean Muffins?

Connie, I get your question but this is Pumpkin Spice with White Beans not Pumpkin. My batch came out great today! I'd say the reason the recipe works is pumpkin and white beans absorb the spice flavors. Just like wheat flour - they don't have much flavor on their own. I followed the recipe but used cottage cheese, a different sugar substitute & I like cloves so I added a dash. I got 10 muffins... Chris

I want to thank the poster who provided the recipe. I was diagnosed with T2 diabetes a year ago. In large part because of alternatives to wheat flour I lost 40 lbs and I am able to keep my all 'readings' (blood glucose, cholesterol, etc) in the normal range for healthy people without medication. I found a white bean pancake recipe - didn't translate well in my attempt at a white bean muffin - they're good with sugar free jam. There are wonderful black bean brownie recipes. My favorite calls for flour & black beans so I use almond flour. Although more versatile than beans, almond flour is 6 to 12 times the cost of a can of beans. Beans provide better nutrition too. I'll be hunting for more Bean Queen recipes. Thanks again. Chris
