Green Beans Supreme
|Green beans/2 packages, 9 ounce each frozen french-style green beans||1 Pound|
|Onion||1 Small, sliced|
|Snipped parsley||1 Tablespoon|
|All purpose flour||2 Tablespoon|
|Finely shredded lemon peel||1⁄2 Teaspoon|
|Milk||1⁄2 Cup (8 tbs)|
|Dairy sour cream||1 Cup (16 tbs)|
|Shredded american cheese||1⁄2 Cup (8 tbs)|
|Fine dry bread crumbs||1⁄4 Cup (4 tbs)|
Cut fresh beans French-style and cook.
(Or, cook frozen beans according to package directions.) Drain.
Cook onion and parsley in 2 tablespoons of the butter till onion is tender.
Blend in flour, lemon peel, 1/2 teaspoon salt, and dash pepper.
Add milk; cook and stir till thickened and bubbly.
Stir in sour cream and cooked beans; heat till just bubbly.
Spoon into 1-quart casserole.
Sprinkle with cheese.
Melt the remaining 1 tablespoon butter; toss with bread crumbs and sprinkle atop beans.
Broii 4 to 5 inches from heat till cheese melts and crumbs brown, 1 to 2 minutes.
