Easy Red Beans Aid Rice
|Smoked link sausages||1 Pound, cut into 1/4-inch slices|
|Onion||1 Medium, chopped|
|Green pepper||1 , chopped|
|Garlic||1 Clove (5 gm), minced|
|Canned kidney beans||30 Ounce, drained (2 Cans, 15 Ounce Each)|
|Canned whole tomatoes||16 Ounce, chopped (1 Can, Untrained)|
|Dried oregano||1⁄2 Teaspoon|
|Ground black pepper||1⁄2 Teaspoon|
|Hot cooked rice||1 Cup (16 tbs)|
Cook sausage in a Dutch oven over medium-high heat until browned, stirring frequently.
Add onion, green pepper, and garlic; cook until tender, stirring occasionally.
Stir in beans and next 3 ingredients.
Bring to a boil; cover, reduce heat, and simmer 20 minutes, stirring occasionally.
Serve over rice.
