Baked Lima Bean And Pear Casserole
|Dried lima beans||1 Pound, washed and drained|
|Water||6 Cup (96 tbs)|
|Melted butter/Margarine||1⁄2 Cup (8 tbs)|
|Firmly packed light brown sugar||1 Cup (16 tbs)|
|Canned pear halves||29 Ounce, cubed (1 can, 2 1/2 cups)|
Put beans in kettle, add water, and bring to a boil.
Boil for 2 minutes; cover pan and let stand for 1 hour.
Then simmer until tender; add more hot water if necessary.
Drain, and season.
Mix butter and brown sugar and a little syrup from pears.
In a large casserole, alternate layers of beans and pears.
Spread each layer with butter-sugar mixture.
Top layer should be pears.
Spread with remaining sugar mixture.
Cover and bake in preheated slow oven (325Â°F.) for about 2 hours.
