Creole Stuffed Green Peppers
|Green peppers||6 Large|
|Onion||1 , chopped|
|Garlic||1 Clove (5 gm), crushed|
|Ground beef||1 Pound|
|Cooked rice/Leftover mashed potato||1 Cup (16 tbs)|
|Tomato soup||1 Can (10 oz)|
Remove stem ends of peppers, and scoop out seeds and membrane.
Parboil 5 minutes in boiling salted water to cover.
Fry onion and garlic in oil until golden brown.
Add meat, and fry until colored.
Stir in salt, pepper, rice and enough soup to moisten.
Blend well; pile mixture into pepper cups.
Set in shallow baking dish.
Dilute remaining soup with a little water and pour around peppers.
Bake at 375F 30-40 minutes.
