Lima Beans Au Gratin
|Lima beans||2 Cup (32 tbs) (frozen)|
|Butter||1⁄4 Cup (4 tbs)|
|Celery||1⁄2 Cup (8 tbs), chopped|
|Onion||1⁄4 Cup (4 tbs), minced|
|Mayonnaise||1⁄2 Cup (8 tbs)|
|Cheddar cheese||1⁄2 Cup (8 tbs), shredded|
|Worcestershire sauce||1 Teaspoon|
|Breadcrumbs||1⁄4 Cup (4 tbs)|
Microwave method: In microwaveable dish, cover and microwave lima beans and 2 tbsp (25 ml) water at High for 7 minutes. Let stand for 2 minutes; drain.
In 4-cup (1 L) measure, microwave 2 tbsp (25 ml) of the butter at High for 1 minute. Add celery and onion; cover and microwave at High for 1 to 2 minutes or until softened. Stir in mayonnaise, 1/4 cup (50 ml) of the Cheddar and Worcestershire sauce; add lima beans.
Both methods: Transfer to 6-cup (1.5 L) baking dish. Combine remaining butter, Cheddar and bread crumbs; sprinkle over lima beans. Broil for 2 to 3 minutes or until cheese has melted and topping is golden.
