Tomatoes & Gorgonzola With Black Beans
|Ripe tomatoes||3 Large, cored and sliced|
|Minced shallots/Minced onion||1 Tablespoon|
|Freshly ground black pepper||1⁄8 Teaspoon|
|Crumbled gorgonzola cheese||1⁄2 Cup (8 tbs)|
|Fermented salted black beans||2 Tablespoon, rinsed and patted dry|
|Olive oil/Salad oil||1 Tablespoon|
|Red wine vinegar||1 Teaspoon|
Overlap tomato slices at 1 end of a platter.
Sprinkle with shallot and pepper.
Mound cheese alongside; mound beans next to cheese.
Garnish with watercress.
Offer oil and vinegar in cruets.
Let each diner spoon a portion of each ingredient onto an individual plate and dress to taste with oil and vinegar.
