Tomatoes & Gorgonzola With Black Beans

Ingredients
  Ripe tomatoes 3 Large, cored and sliced
  Minced shallots/Minced onion 1 Tablespoon
  Freshly ground black pepper 1⁄8 Teaspoon
  Crumbled gorgonzola cheese 1⁄2 Cup (8 tbs)
  Fermented salted black beans 2 Tablespoon, rinsed and patted dry
  Watercress sprig 1
  Olive oil/Salad oil 1 Tablespoon
  Red wine vinegar 1 Teaspoon
Directions

Overlap tomato slices at 1 end of a platter.
Sprinkle with shallot and pepper.
Mound cheese alongside; mound beans next to cheese.
Garnish with watercress.
Offer oil and vinegar in cruets.
Let each diner spoon a portion of each ingredient onto an individual plate and dress to taste with oil and vinegar.
