Grilled Catfish With Black Bean Relish
|Catfish fillets||16 Ounce|
|Chopped onion||1⁄4 Cup (4 tbs)|
|Chopped celery||1⁄4 Cup (4 tbs)|
|Chopped carrot||1⁄4 Cup (4 tbs)|
|Garlic||3 Clove (15 gm), minced|
|Jalapeno peppers||3 , chopped|
|Canned black beans||15 Ounce (1 Can, Undrained)|
|Diced ham||3⁄4 Cup (12 tbs)|
|Chopped cilantro/Parsley||1⁄4 Cup (4 tbs)|
To prepare catfish: Sprinkle fillets with garlic, salt and pepper.
Spray grill basket or rack with nonstick cooking spray.
Grill fish uncovered directly over medium-hot coals about 5 minutes per side, or until fish flakes easily.
To prepare relish: In medium saucepan cook onion, celery, carrot, garlic and jalapeno peppers in margarine until onion is tender.
Stir in black beans, ham, cilantro and salt.
Bring to boil; reduce heat and simmer, uncovered, 10 minutes or until desired consistency.
