Baked Steak And Lima Beans

  Dry lima beans 1 Pound
  Water 6 Cup (96 tbs)
  Bacon slices 4
  Beef round steak 2 Pound, cut in 1-inch strips
  All purpose flour 1⁄4 Cup (4 tbs)
  Onion 1 Large, sliced
  Canned tomato juice 18 Ounce (1 Can)
  Packed brown sugar 1 Tablespoon
  Salt 1 1⁄2 Teaspoon
  Dry mustard 1 Teaspoon
  Pepper 1⁄8 Teaspoon

Rinse beans; add the 6 cups water.
Bring to a boil; simmer 2 minutes.
Remove from heat; let stand, covered, 1 hour.
Do not drain.
Cover; simmer for 25 minutes.
Drain, reserving liquid.
In oven-going Dutch oven, cook bacon till crisp.
Drain, reserving drippings.
Crumble bacon; set aside.
Coat beef with flour.
Brown beef in hot drippings; pour off excess fat.
Stir in beans and onion.
Combine tomato juice, sugar, salt, mustard, and pepper; pour over bean mixture.
Bake, covered, at 325° till tender, about 1 1/2 hours.
Add some reserved bean liquid if mixture becomes dry.
Stir in bacon before serving
