  Bulk pork sausage 1 Pound
  Onion 1⁄2 Cup (8 tbs), chopped
  Canned black-eyed peas 15 Ounce, drained, rinsed (1 Can)
  Instant rice 1 Cup (16 tbs)
  Hot water 3 Cup (48 tbs)
  Salt 1⁄2 Teaspoon
  Cayenne pepper 1⁄4 Teaspoon

In 3-quart casserole, place sausage and onion.
Microwave at HIGH (10) 6 to 10 minutes until sausage is thoroughly cooked; stir after 4 minutes to break sausage apart; drain.
Add black-eyed peas, rice, water, salt and pepper.
Microwave at HIGH (10) 7 to 14 minutes until rice is cooked and most of the liquid is absorbed; stir after 5 minutes.
Let stand 5 minutes before serving.
