Nicoise Green Beans's picture
  Olive oil 2 Tablespoon
  Onion 1 Medium, chopped
  Celery stick 2 , chopped
  String beans 1 Pound
  Canned chopped tomatoes 16 Ounce (1 Can)
  Vegetable stock/Tomato juice 4 Tablespoon
  Bay leaf 1
  Fresh parsley 1⁄2 Cup (8 tbs), chopped
  Freshly ground black pepper To Taste
  Salt To Taste

Heat the oil in a large frying pan and gently saute the onions and celery until lightly browned.
Boil or steam the beans until tender (about 10 minutes).
Drain and set aside.
Add the tomatoes, stock, bay leaf and parsley to the saute.
Stir well and simmer this sauce for 20 minutes, uncovered.
Season to taste.
Add the cooked beans to the sauce and stir well.
Bring back to a simmer and cook for a further 2 minutes.
