Black Bean Steamed Fish
|Fermented black beans||2 Tablespoon|
|Garlic cloves||1 Large|
|Fresh ginger root slices/1/4 teaspoon ground ginger||3 , minced (Thin Slices)|
|Soy sauce||1⁄2 Cup (8 tbs)|
|Salad oil||1 Tablespoon|
|Fish steaks/Fish fillets||2 Pound (3/4 Inch Thick)|
|Sliced green onions with tops||2 Tablespoon|
Wash the black beans, drain, and crush to a paste with the garlic and ginger.
Add soy sauce, sugar, and oil; mix thoroughly.
Arrange the fish in a single layer on a heat proof plate (one that can be put into a steamer), or shape a plate of heavy foil.
Spread top of fish evenly with the bean mixture.
Arrange the plate on a rack or trivet over boiling water in a steamer.

Cover and steam for 10 minutes, or until fish flakes easily with a fork.
Remove, sprinkle with the green onions, and serve immediately.
