Black Bean Steamed Fish

Ingredients
  Fermented black beans 2 Tablespoon
  Garlic cloves 1 Large
  Fresh ginger root slices/1/4 teaspoon ground ginger 3 , minced (Thin Slices)
  Soy sauce 1⁄2 Cup (8 tbs)
  Sugar 1 Teaspoon
  Salad oil 1 Tablespoon
  Fish steaks/Fish fillets 2 Pound (3/4 Inch Thick)
  Sliced green onions with tops 2 Tablespoon
Directions

Wash the black beans, drain, and crush to a paste with the garlic and ginger.
Add soy sauce, sugar, and oil; mix thoroughly.
Arrange the fish in a single layer on a heat proof plate (one that can be put into a steamer), or shape a plate of heavy foil.
Spread top of fish evenly with the bean mixture.
Arrange the plate on a rack or trivet over boiling water in a steamer.

Cover and steam for 10 minutes, or until fish flakes easily with a fork.
Remove, sprinkle with the green onions, and serve immediately.
