Lemon Green Beans
|Green beans||1⁄2 Pound|
|Sweet red pepper||1⁄2 Small, cut crosswise into rings|
|Dried basil||1⁄4 Teaspoon|
|Lemon rind strips||1 Tablespoon|
|Lemon juice||1 Tablespoon|
|Sesame seeds||1 Teaspoon, toasted|
Wash beans; trim ends, and remove strings.
Cut beans into 2-inch pieces.
Combine beans, pepper rings, and basil in a medium saucepan with a small amount of water.
Bring to a boil.
Cover, reduce heat, and simmer 12 to 15 minutes or until vegetables are tender.
Transfer mixture to a serving bowl.
Add lemon rind, lemon juice, and sesame seeds; toss.
