White Beans Peppers And Tomatoes
|Chopped pepper||1⁄2 Cup (8 tbs)|
|Chopped tomatoes||1⁄2 Cup (8 tbs)|
|Chopped red onions||1⁄4 Cup (4 tbs)|
|Defatted chicken stock||1⁄4 Cup (4 tbs)|
|Garlic||1 Clove (5 gm), minced|
|Canned beans||15 Ounce, drained, rinsed (1 Can, White Kidney / Navy)|
|Orange juice||1 Tablespoon|
|Chopped fresh rosemary||1 Teaspoon|
|Grated orange rind||1 Teaspoon|
|Black pepper||To Taste|
In a large frying pan, combine the peppers, tomatoes, onions, stock and garlic; cover and cook over medium heat for 3 minutes, or until the peppers are soft.
Add the beans, orange juice, rosemary and orange rind; cook and stir for 2 minutes, or until hot.
Add salt and pepper to taste.
