Carob Chip Cookies
|Solid vegetable shortening||1 Cup (16 tbs)|
|Firmly packed brown sugar||1⁄2 Cup (8 tbs)|
|Honey||3⁄4 Cup (12 tbs)|
|Whole wheat flour||2 1⁄4 Cup (36 tbs)|
|Baking soda||1 Teaspoon|
|Raw sunflower seeds||1⁄2 Cup (8 tbs)|
|Quick cooking rolled oats||1 Cup (16 tbs)|
|Carob chips||8 Ounce|
In large bowl of an electric mixer, beat shortening and sugar until creamy; beat in eggs, honey, and vanilla.
In another bowl, stir together flour, baking soda, and salt; gradually add to shortening mixture, blending thoroughly.
Add sunflower seeds, oats, and carob chips and stir until well combined.
Drop dough by rounded teaspoonfuls onto greased baking sheets, spacing cookies about 2 inches apart.
Bake in a 375Â° oven for about 9 minutes or until golden.
Carefully transfer to racks and let cool.
