Beans Cooked In The Style Of Little Birds

Ingredients
  Olive oil 2 Tablespoon
  Garlic 3 Clove (15 gm), chopped
  Fresh sage leaves/1/2 teaspoon dried 8
  Canned italian peeled tomatoes 1 1⁄4 Ounce, drained and chopped
  Frozen black eyed peas 20 Ounce, Defrosted (Two 10 Ounce Packages)
  Salt 1⁄2 Teaspoon
  Pepper 1⁄2 Teaspoon
Directions

1. In a nonreactive medium saucepan, heat olive oil over medium-low heat. Add garlic and sage and cook 30 seconds, or until garlic is fragrant but not browned. Add tomatoes, raise heat to medium, and simmer 5 minutes.
2. Add black-eyed peas and cook 5 minutes longer. Season with salt and pepper. Serve hot or at room temperature
