Beans Cooked In The Style Of Little Birds
|Olive oil||2 Tablespoon|
|Garlic||3 Clove (15 gm), chopped|
|Fresh sage leaves/1/2 teaspoon dried||8|
|Canned italian peeled tomatoes||1 1⁄4 Ounce, drained and chopped|
|Frozen black eyed peas||20 Ounce, Defrosted (Two 10 Ounce Packages)|
1. In a nonreactive medium saucepan, heat olive oil over medium-low heat. Add garlic and sage and cook 30 seconds, or until garlic is fragrant but not browned. Add tomatoes, raise heat to medium, and simmer 5 minutes.
2. Add black-eyed peas and cook 5 minutes longer. Season with salt and pepper. Serve hot or at room temperature
