Lima Bean Loaf
|Cooked lima beans||2 Cup (32 tbs) (Fresh / Frozen / Dried)|
|Whole wheat bread crumbs||1 Cup (16 tbs)|
|Finely chopped green pepper||1⁄2 Cup (8 tbs)|
|Finely chopped onion||1⁄2 Cup (8 tbs)|
|Chopped nuts||1⁄2 Cup (8 tbs)|
|Eggs||2 , well beaten|
|Heavy cream||1⁄2 Cup (8 tbs)|
|Melted butter||4 Tablespoon|
1. Preheat the oven to 350 degrees.
2. Mix together the lima beans, bread crumbs, green pepper, onion, nuts, eggs, cream, salt, and 2 tablespoons melted butter. Turn into a well-buttered 8 1/2- by 4 1/2- by 2 1/2-inch loaf pan. Bake for 45 minutes, basting 3 times with melted butter during cooking.
