Microwaved Hoppin John
|Dry black eyed peas||1 1⁄4 Cup (20 tbs)|
|Water||4 Cup (64 tbs)|
|Chopped onion||1 1⁄2 Cup (24 tbs)|
|Crushed dried red pepper||1⁄4 Teaspoon|
|Garlic||1 Clove (5 gm), minced|
|Salt pork||8 Ounce, cut in 12 pieces|
|Hot cooked rice||3 Cup (48 tbs)|
In 3-quart casserole, combine peas and water; let soak overnight.
Do not drain.
Add onion, pepper, red pepper, garlic, and bay leaf.
Cook, covered, at HIGH for 15 minutes or till boiling.
Cook at MEDIUM LOW (3) for 45 minutes.
Stir in salt pork.
Cook at MEDIUM LOW (3) for 45 minutes or till tender, stirring twice.
Remove salt pork and bay leaf.
Season to taste.
