Ingredients
  Head of lettuce 1
  Red bell pepper 1⁄4 Cup (4 tbs) (8 - 10 strips)
  Green bell pepper 1⁄4 Cup (4 tbs) (8 - 10 strips)
  Yellow bell pepper 1⁄4 Cup (4 tbs) (8 - 10 strips)
  Cucumber 1
  Tomato 2 Medium (Can Use Cherry Tomato)
  Baby carrots 1⁄4 Pound
  Beetroot 1 Cup (16 tbs)
  Onion 1 , chopped / sliced
  Cooked garbanzo beans 1 Cup (16 tbs) (Chickpeas)
  Ranch salad dressing 1 Tablespoon
  Croutons 1⁄2 Cup (8 tbs)
  Shredded cheese 1 Cup (16 tbs)
Directions

Wash and dry all vegetables.
Cut lettuce into bite size pieces and bell peppers into one inch strips.
Slice cucumber and finely chop tomato. Grate beetroot and slice onion.
Toss all the ingredients exept for dressing and cheese.
Now add dressing and cheese. Mix it lightly.
Serve immediately.
