Green Bean Salad With Sunflower Seeds
|Green beans||1 Pound|
|Olive oil||1 Tablespoon|
|Sunflower seeds||2 Tablespoon|
|Garlic clove||1 Large|
|Tarragon vinegar||4 Teaspoon|
|Spinach leaves||1⁄4 Cup (4 tbs), shredded|
|Chopped scallions||1 Tablespoon (Garnish)|
Steam the beans until just crisp-tender, about 3 or 4 minutes.
While the beans steam, place the oil in a small skillet with the sunflower seeds and cook, stirring, over medium heat until the sunflower seeds are golden brown.
Do not overcook.
Remove from heat.
Push the garlic through a garlic press into the skillet.
When the sunflower seeds have cooled slightly, stir in the vinegar.
In a large bowl, toss the beans with the sunflower seed mixture.
Cool, then chill.
