Green Bean Salad With Sunflower Seeds

Ingredients
  Green beans 1 Pound
  Olive oil 1 Tablespoon
  Sunflower seeds 2 Tablespoon
  Garlic clove 1 Large
  Tarragon vinegar 4 Teaspoon
  Spinach leaves 1⁄4 Cup (4 tbs), shredded
  Chopped scallions 1 Tablespoon (Garnish)
Directions

Steam the beans until just crisp-tender, about 3 or 4 minutes.
While the beans steam, place the oil in a small skillet with the sunflower seeds and cook, stirring, over medium heat until the sunflower seeds are golden brown.
Do not overcook.
Remove from heat.
Push the garlic through a garlic press into the skillet.
Stir well.
When the sunflower seeds have cooled slightly, stir in the vinegar.
In a large bowl, toss the beans with the sunflower seed mixture.
Cool, then chill.
